Broke But Fed: Goulash Base (Freezer Friendly)
This is one of those meals that looks basic but feeds a family forever. I make a big batch, freeze it flat, and remix it into hot dogs, quesadillas, soups, and stuffed peppers. It’s cheap, filling, and ridiculously flexible.
Why This Recipe Works
• Freezer friendly
• Cheap ingredients
• Stretchable with beans/veg
• Kid adjustable
• Remixable
Ingredients
• 1 lb Ground beef (or lentils/beans)
• Onion and peppers OR 1 full bag of frozen fajita peppers and onions
• Garlic
• 1 large can of crushed tomatoes (28oz)
• 1 small can of tomato sauce or diced tomatoes (15oz)
• 2 Tablespoons of tomato paste
• 2 tablespoons of paprika
• 1/2 tablespoon of garlic powder
• 1/2 tablespoon of onion powder
• 1/2 tablespoon of thyme
• Salt & pepper
• Optional veggies (frozen corn, peas, carrots, peppers)
• Optional flavour boosters: Worcestershire, soy sauce, browning liquid, hot sauce, chilli flakes, pinch of sugar
Instructions
1. Brown meat/onions
2. Add sauce/spices
3. Simmer
4. Cool
5. Freeze flat in bags
NOODLES (ALWAYS SEPARATE)
• Cook fresh when serving
• Use whatever’s cheapest (elbow, shells, rotini)
• Toss with a bit of oil if storing separately
This is how you avoid mush and freezer sadness.
Stretch It Further (2-3 cups total)
• Beans
• Lentils
• Frozen veggies
• Rice
• Mashed potatoes
• Leftover roast veg
• Grated carrot
Turn It Into
• Chili dogs
• Quesadillas
• Soup (add broth)
• Stuffed peppers
• Pasta sauce
• On toast
